Q: Who is "Marisol"?

A: Marisol is the producer of some of the highest quality unrefined traditional sea salt from the Algarve Region of Portugal. Marisol produces their traditional pure white unwashed unrefined sea salts by gently sun-drying pure sea water using only the sun and wind, then slowly and carefully grinding the crystals using a steel grinder to a specific size. All of this is done without compromising the fragrance, flavour and nutritional profile. Marisol's high quality products and packaging reflect their commitment to consistent and reliable quality. Q: Who is "Le Paludier"?

A: Le Paludier is one of the most trusted names in Europe and Canada for clean unrefined sea salt. This was the first french company (1975) to manufacture fine grey sea salt by gently dehydrating (removing moisture) from the grey crystals of sea salt, then grinding on stones. All of this is done without compromising the fragrance, flavour and nutritional profile. The fine grey sea salt (because it has no humidity) is higher in trace elements than the coarse grey sea salt. (Certified by scientific thesis at Bordeaux University.) Le Paludier has a solid reputation and their products reflect their commitment to consistent and reliable quality. Q: What accounts for the differences in color in unrefined sea salt?

A: Unlike refined sea salt which is always a clinical pure white color (like white sugar), natural unrefined sea salt does vary in color from light grey to almost pure white (leaving aside "Fleur de Sel" or "Flor de Sal" which consists of small creamy white crystals, naturally bleached by the sun and harvested from the surface). The color variation of the sea salt depends on the collector's ( Paludier's or Marnoto's ) technique, the gathering time and the texture of the bottom of the salt pans and the climate of the salt-producing region. Generally speaking, a hotter, drier climate such as that of Portugal produces a whiter salt than does a cooler, moister climate such as France.

Q: How is your sea salt dried?

A: Most of our sea salts are naturally sun and wind dried, except for the fine grey Le Paludier sea salt which is made from the coarse grey sea salt. It is gently dehydrated by low temperature electric heat and then stone ground. This sea salt has been tested and retains all of the same minerals as the coarse grey sea salt, but without the moisture. Marisol sea salts are all entirely dried only by the action of the sun and wind.
