A few years ago, we heard from an organic miso maker that he would only use traditional Portuguese sea salt in his miso, which he said was of higher quality than the sea salt from Guerande. After researching it, we discovered that what he said was true.
As of March 2008, we are now the Exclusive Importer for Canada of Marisol Sea Salts: highest quality hand-harvested unrefined natural organic traditional artisan sea salts from Algarve, Portugal, harvested using traditional celtic methods.
Marisol's Portuguese sea salts are of the same high standards and quality as the sea salts from Guérande. In addition, Marisol's sea salts are naturally very clean, (and lack the grey clay colour), due to the hotter, drier climate in the Algarve region of Portugal, which gives a very abundant harvest of clean salt, requiring no washing. Marisol fine salt is naturally moist, having been dried only by the action of sun and wind (unlike Le Paludier fine salt which is dried with electric heat).
